At this point in time, the MathJax functionality is only enabled for the "dc.description.abstract" field here: https://github.com/DSpace/dspace-angular/blob/dspace-8_x/src/app/item-page/simple/field-components/specific-field/abstract/item-page-abstract-field.component.ts#L52
There are currently no configurations that allow you to enable it for other fields. That said, it might be possible to customize the code directly if you wanted to enable additional fields. I don't have a guide for how to do that, but if you (or someone else) figures out a way to do so, we do welcome code contributions from anyone back to DSpace.
