Hello Marco, the authorisations DEFAULT_ITEM_READ and DEFAULT_BITSTREAM_READ of a collection are used to populate the authorizations of an item and it's parts during submission. Once an item is submitted the DEFAULT_ITEM_READ and DEFAULT_BITSTREAM_READ does not influence the item policies anymore.
There is an advanced authorization management in the admin ui. Log in to your dspace instance as administrator and go to [YourDSpaceURL]/dspace-admin.
