This is somewhere on my list of annoyances I'd like to find time to correct. The first time I looked at the LDAP authentication plugin, I asked myself why it bothers storing this stuff at all.

Directory-enabled applications should depend on the directory. The
only thing that DSpace really needs or ought to "know" about an
LDAP-authenticated EPerson is the DN. The EPerson class should ask
the directory for any other identity datum required of it.
