Glenn, I would advise to do these as separate steps. Overall, you'll take a bit more down time, but doing them together increases the risk of having a problem / makes it harder to diagnose.
Not that either step is particularly risky, but if you had a problem with - say - the handle server, would it be because of the server migration, or the upgrade?
