Text is normally defined within a file called Messages.properties, or Messages_en.properties (as an English language file)
To be honest, my download of DSpace did not come with a Messages.properties file, and I rather had to download it and place it within my server. I placed it within my [dspace-source]/dspace/module/jspui/src/main/resources directory, and when you build your DSpace, it ends up in your webapps/jspui/WEB-INF/classes/ directory. Here is a link to one available on the web: https://svn.ci.iscte.pt/DSpace/trunk/config/language-packs/Messages_en.properties I had to name it Messages_en.properties to get it to work (Messages.properties gave problems). You should also remember that you must rebuild DSpace (ant update) after you make changes to this file.
