Thanks for all your help Mark, and everyone else. Ended up doing a complete rebuild of our source from scratch, keeping a careful eye on our customisations, and didn't come across this error. A bit of a mystery, but at least our site is backup and running (for now :p). Just let me know if there is anymore information I can give.
