to which version of DSpace and statistics are you referring to ?
In general, a bitstream view is an actual download of a file, attached to
one of your items in DSpace. An item can contain multiple bitstreams.
An item view on the other hand, is a pageview for one of the item pages, for
example, if you access this page, it's considered an item view:

Clicking download for the file, is a bitstream view.
