Aaron, It's not an approach I would endorse. You will find it difficult to further manage your i18n customizations when you go to upgrade your DSpace instance. if your utilizing the non-src release, these jars are drawn from a maven repository, altering them int he installation location will cause your changes to be lost in the next build, it is better to make your changes in [dspace-src]/dspace/... and preserve them in a version control repository like svn so you can replicate your build process.
