Joseph,

At a quick glance, it looks like your titles are not being indexed 
properly.  I visited the DSpace "Advanced Search" feature on your site:

http://irserver.ucd.ie/dspace/advanced-search

When I select the search type to be "title" and enter in *any* word from 
any existing title in your system, I always seem to end up with "no 
results".

This implies to me that it's likely your title fields are not being 
indexed at all.  By default, DSpace always indexes titles, so maybe 
you've customized the "search.index.*" settings in dspace.cfg?

Specifically you should have this line:

search.index.3 = title:dc.title.*

You might want to double check your "search.index.*" field to ensure 
that the proper title field is listed (assuming you are storing your 
titles in "dc.title", the default should be fine).  You also should not 
have any duplicate numbers in your settings (i.e. there should not be 
two 'search.index.3' settings).   If this all looks correct, you could 
also try and look more closely at what is being stored in the Lucene 
(which DSpace uses) search indexes (in [dspace]/search/ folder).  The 
best way to look at these indexes is using a Lucene tool called LUKE.

Hopefully that gives you a few things to look at.  I'm not sure exactly 
what the issue is, but is seems to have to do with your titles not being 
indexed.
