Karen, The assetstore can be on a different server, but you just need to make sure it "appears" as though it is a drive on the DSpace server. So, it just needs to be mapped or mounted to appear as though it were on the same server as DSpace.
All you should need to do is the following (Before getting started, I'd recommended doing a DSpace backup, just to be safe): (1) Stop/Shutdown Tomcat (2) Map/Mount the storage location (on different server) to your current server. For example, it could be mounted to /dspace/assetstore (or whatever path you choose) (3) Make sure all your existing contents in your existing 'assetstore' folder get moved to the new location (including all subfolders) (4) Update the 'assetstore.dir' configuration to point at that new mounted drive. (5) Restart Tomcat Obviously, test to make sure everything is still working (e.g. download some files, etc).
