Hello Ian, you got to customize [dspace-source]/dspace-api/src/main/java/org/dspace/workflow/WorkflowManager.java In the method private static void notifyOfReject(Context c, WorkflowItem wi, EPerson e, String reason) you can add an argument containing the metadata.
Then you got to customize the email template [dspace-source]/dspace/config/emails/submit_reject to process the new argument. Finally you got to rebuild and redeploy your application.
