You have two options. The classic one is to back up the database and assetstore:

The new one since 1.7 is to use a package format which can be imported
even into another dspace instance:
https://wiki.duraspace.org/display/DSDOC18/AIP+Backup+and+Restore

Also don't forget to back up your configuration files. You can restore
such backups even on a clean dspace installation.
