Hello Fabiana, the languages packs are dependencies (dspace-api-lang for the API and jspui and dspace-xmlui-lang for the xmlui) and pulled in during the build process.
The single file can be found at: http://scm.dspace.org/svn/repo/modules/dspace-api-lang/trunk/src/main/resources/Messages_it.properties Note that the Italian translation is based on 1.5.2, so if you are using 1.8.0 it will need updating anyway. If you update the translation it would be great to share it with the DSpace community.
