So, if you only want to remove the link from the sidebar, just add
this to your theme's XSL:
<xsl:template match="dri:item/dri:xref[@target='/browse?type=dateissued']">
</xsl:template>
If you want to remove date.issued index completely (so you won't be
able to search on it), you can do this in dspace.cfg, details are
here:

Remember that when removing an index, you have to renumber any
following numbers so that you don't "leave a gap". Also remember that
changing indexed fields requires running index-init and
update-discovery-index (if you're using Discovery).
