Hi Mark,
you could use a web crawler like wget or HTTrack [1] that would copy
the whole site structure in HTML. This is not DSpace-specific, works
with any website. But make sure to use this updated robots.txt file
[2] which tells crawlers not to download the dynamically generated
search and browse indices.
