WIth your custom metadata, you should be able to simply do this query
in any collection/community and it will list the items and give you
the count (of the items, not bitstreams):

format.mimetype:JPG

(Assuming JPG is the value you're storing that, you may need to use
quotes if there are spaces in the metadata value)
