I am very grateful for your advice. For now I will explore the use of dc.relation metadata fields for storing relationships between items. I'm not too concerned with whether the DSpace UI or search will support the relationships in the short term, because the presentation of the course and related items will be handled in a Drupal instance (http://drupal.org) -- I'm developing a Drupal module that imports items for selected DSpace communities into custom entities (http://drupal.org/sandbox/lwalley/1911858), a slightly different approach than an existing DSpace module (http://drupal.org/project/dspace) that uses a custom parser to import items into Biblio (http://drupal.org/project/biblio) nodes.
