Well you asked specifically where to put it in the source directory. In order to get it to the installation directory, you have to run mvn package and ant update. You can also work in the installed directory, in that case the theme will be located in [dspace]/webapps/xmlui/themes/. Of course, it will be moved away next time you run ant update, that's why it's recommended to keep it in sync with the source directory.
