I've installed and run dspace on a Ubuntu server and it run well.

If you're a java developer, you should fork the Dspace project directly and
install dspace on that code base.

Dspace uses large RAM because it focuses on delivering documents, so if
your virtual machine has enough RAM, there should be no issue to use in
production.
