We are running that way now.  We still have a few databases to
migrate, but we do have a couple of DSpace instances running against a
single Pg instance in a separate machine.

Since the Pg JDBC driver always uses a TCP connection whether the DBMS
is local or remote, the only change in performance should be due to
the network hardware and the overall utilization of the path between
the hosts.

Pro:
o  As you said, fewer Pg instances to maintain, back up, etc.
o  DSpace and Pg don't step on each other by competing for the same
   resources.  (This could be significant, as they tend to get busy
   concurrently.)
o  No DBMS version skew across applications.
o  Simpler host resource tuning for both products.

Con:
o  your DSpace instance is now dependent on *two* hosts.
o  DBMS maintenance downtime affects all connected applications.

I haven't noticed any performance issues.  One DSpace instance seems
slightly *more* responsive this way, but it also moved to newer
hardware around the same time so I can't really say that the DBMS
connection made a difference one way or the other.
