  Thanks for the help.  I have removed the double quotes now from the config 
and will see if I get any errors/emails appear.

Don't use quotes. This is what that section should look like:

mail.from.address = 
[email protected]<mailto:[email protected]>

# Currently limited to one recipient!
feedback.recipient = [email protected]<mailto:[email protected]>

# General site administration (Webmaster) e-mail
mail.admin = [email protected]<mailto:[email protected]>

# Recipient for server errors and alerts
alert.recipient = [email protected]<mailto:[email protected]>

# Recipient for new user registration emails
registration.notify = [email protected]<mailto:[email protected]>
mail.from.address doesn't have to exist, but it has to be filled in (this is 
probably what's causing the problem). And you probably want to leave 
registration.notify empty.
