Sorry for the lack of documentation. I had a brief look and this class is the only place where it's used:
https://github.com/DSpace/DSpace/blob/dspace-3.1/dspace-api/src/main/java/org/dspace/discovery/SolrServiceImpl.java#L1133 It seems to designate several important fields as "stored", which means the original unmodified value of that field is stored in Solr and it's retrievable, so it can be displayed from Solr. It's necessary for MoreLikeThis and for results highlighting.
