You can find the recommended values in [3]. Please note that it's also important how much memory you assign to those different memory "spaces", not just how much memory you give Tomcat in total. I'd try changing the GC first because it's easy to test (just change JAVA_OPTS and restart Tomcat) and might even resolve the problem.
