Just move the content of the assetstore and tell DSpace where you put
it:

1.  Shut down DSpace so that no submissions are buried during the
    move.

2.  Connect your external drive and figure out where Windows mounted
    it.  (The drive letter.)  You'll need to ensure that it always
    appears there, from now on.  For now, let's pretend that it is
    "E:".

3.  Move all of the directories in /dspace/assetstore to the external
    drive.

4.  Reconfigure DSpace:  in dspace.cfg, the value of 'assetstore.dir'
    should be the path to the new assetstore on the external drive.
    If the external drive is mounted as "E:" then you'd have something
    like "assetstore.dir = E:\".

5.  Restart DSpace.
