Hi David,
not a complete answer here but by default Google Analytics will not track
your file downloads while they will be registered in the DSpace stats.
So one theory is that your visit from Vienna/Venice was a direct hit on a
file, rather than a dspace pageview.
To investigate particular usage events in more detail, try to locate their
exact data in your SOLR usage index: the index stores more information on
these hits than what you can see in the DSpace web ui.

A totally different theory is that one reason why you can see different
stats is that Google's bot filtering will differ from what you have setup
locally. E.g. there's a chance that your visit from Vienna/Venice is being
recognized by Google as a bot/spider, while DSpace may be missing it in
your configuration.
