To generate thumbnails, you have to run the media filters.
Typically you'll want to make a cron job do this. The DSpace command line
is: /dspace/bin/dspace filter-media -a
If you'd like to enable the media-filter that generates an image thumbnail
for PDF's, then take a look the XPDF media filter.

Go to Edit Collection -> Assign Roles, and there are some settings there to
setup the Accept / Reject / Edit Metadata, depending on what you need work
your workflow.
