The 6 months for Solr statistics is hard coded:
https://github.com/DSpace/DSpace/blob/master/dspace-xmlui/src/main/java/org/dspace/app/xmlui/aspect/statistics/StatisticsTransformer.java#L205

There is an alternative Statistics option available in DSpace 3, called
Elastic Search. It gives you access to all data you have available:
https://wiki.duraspace.org/display/DSDOC3x/Elastic+Search+Usage+Statistics

Also, FYI, DSpace 5 is likely to be offering a Google Analytics integration.
