Yes they get the headers. Your email received this headers:
X-DSPAM-Result: Innocent

Will try this. By accident, this night I got a spam mail that was actually 
moved to my quarantine folder. I get the impression that just the newly 
trained spams are not discovered. In fact the server was fresh installed in 
february, but I transfered the MySQL database from the old server. This 
matches the fact that the new created testuser does not get any entries in 
dspam_stats. But should there be not some error messages somewhere?

On the old server, training of spam worked w/o problems, btw.
