Actually you've escaped the spaces properly, but there's no module  
named a.out in the Leopard runtime.
Try one of these instead:

% sudo dtrace -l -n 'pid$target:::entry' -c '/Applications/Address\  
Book.app/Contents/MacOS/Address\ Book'
