I'd suggest dia [ http://www.gnome.org/projects/dia/ ]. It's definitely not as sleek as Visio, but does the job if you're into spartan interfaces and not into bloated feature sets. I've used it for some drawings although the graph set is not artistic nor colourful. It's a gtk+ thing, so I guess you can run it on almost anything.
