I have used Cat 5 for many things. Most memorable - securing a picnic table to the roof of my van. It should also be useful for pulling stuck 4x4s out of the desert :-)

If it's Cat 5, then more is better. They're thick and useful and sometimes colored and pretty. They really feel like something you could wire the whole world with. But if you're talking about power cords with the transformers at the end, then I say get rid of them all. If they're not already plugged into something, they belong in the trash.
