You could try the recovery software written by Ilfak (of IDA fame). It works 
excellently for 
recovery of media files if the file system is not fragmented (It does cost 
money however). Once you 
have overwritten the data portion of the ext3 filesystem, you are SOL with 
regards to actually doing 
guided recovery. You blew all the metadata away.

I can personally vouch for this one.. I bought a copy for my brother when he 
inadvertently formatted 
his mates *full* 1GB flash card in his camera, rather than copying the data to 
a DVD (which he was 
trying to do). Got about 90% of the images back.. lost most of the movies 
though (the card was badly 
fragmented)
