Kevin, Postfix is an MTA and how one configures username/passwords depends on the purpose and the configuration. A quick google would show you a number of ways of configuring it depending on your purpose - from local system mail delivery to multi virtual domain hosting. If u're looking at a full fledged email system based on open source - let me suggest Zimbra to you. It's based on a number of open source components including postfix and is reasonably easy to install, configure and maintain.
