You've done a "Clean Install" of the system. This is usually good because it
provides a fresh install containing everything you need to run nice and
smooth (no mix of old and new extension, preferences etc.). At this point
you may want to search through your old system to see if there are any third
party goodies that you want to keep. Things like fonts, extensions, control
panels etc. 

If you see a number of items that you would like to keep then you should
drag them into you new system just one or two at a time (except fonts, you
can put them in as a group), restart and try a few tests such as opening
your critical applications, make a new document in them, save, and close.

You do this to see if there are any conflicts with the item you just
installed in the system. If you tried putting everything in at once you
could have a conflict and not know which specific item you installed is
creating the conflict. Then it becomes a pain trying to resolve it.

Once you certain there is nothing left in the Previous System Folder then go
ahead and delete it (or back it up to Zip or something).
