You can probably run 8.1 without any ill effects memory wise, however I'd
stay with 7.6.1.  I've run 8.1 on two 603 PPC machines - my 2400 running at
180 mhz before I installed a G3 chip, and a Performa 6360 with a 160mhz 603
in it, and in both instances the speed drop in moving from 7.6 to 8.1 wasn't
worth it.  I'd imagine anything about 7.6.1 would be painfully slow on a 100
mhz 603.
