Macs will boot just fine without the keyboard and mouse. Most Macs
(all?) want to set the video resolution by sensing the monitor and
will stop booting if there isn't a way to do so. The workaround is
to simply use an adapter for connecting a PC monitor to a
Macintosh. The adapter provides the information about monitor
resolution and frequency because PC monitors cannot. The Mac will
boot happily with just the adapter connected and no monitor.
I have two Macs running full-time in just such a configuration:
a Quadra 650 running NetBSD and a 6100/60 running MkLinux. Maximum
uptime between power failures: 453 days.
