Photoshop 2.5[.1] uses much less memory than more recent versions,
so it is a perfect choice for a Duo. The only way to answer the
question of how much is enough RAM is to know what you will be
doing with Photoshop. Photoshop 2.5 needs enough memory for the
image you have open, plus a copy for Undo, plus a scratch buffer
for transformations, etc., the size of which depends on the operation.
You will also need space for the Copy/Paste buffer, which of course
can be as large as the whole image. A general rule of thumb is to
use RAM equivalent to three to four times the size of your image,
although the actual usage can be as high as 6x or more. Image size
in bytes for RGB images is ( Height * Width * 3 ). If you add
channels, then change the "3" to however many channels you expect
to use. For example, if you will be working on a single image (at a
time) which is RGB + one mask channel and 640x480 pixels, you will
need (for good performance) at least 640*480*4*4 Bytes, or 4.9MB
plus the amount of RAM used by the application itself, the system
and any other apps you have running. Remember that Photoshop uses
it's own swapping system, so even if you have Virtual Memory turned
off, if Photoshop needs more memory than is available it will use
space on the disk (just like virtual memory).
BTW, 56 MB (the max for a 2300c, right?) is plenty for using
Photoshop 2.5, unless you are doing large work. I used to make my
living with Photoshop and did quite a lot of projects with just 40MB.
