There are "Force-Quit" and "Force-Restart" key combinations if I remember correctly.
They are Cmd-Opt-Escape and Cmd-Ctrl-Power, respectively. After force-quit, you should restart your machine. Force-quit is technically less severe than force-restart and should always be tried first.
