I have not seen one of these things, but I would think that the SCSI pin
is simply a pass through affair (HDI-30/29 pin male to HDI-30/29 pin
female) unless it also converts the HDI-30 to a DB-25 connector. The
problem with just replacing it with a true 30 pin HDI-30 connector, is
that it would then always be in SCSI disk mode (the 30th pin is a manual
trigger). The only way around it then would be to remove the pass through
device and in its place install a SCSI dock which has a switch to go from
regular to SCSI disk mode. I have never seen one of these that was HDI-30
to HDI-30 however. Most Mac stores sell them that go from HDI-30 to DB-25,
which wouldn't be such a bad thing. If the existing SCSI connectors are
simply a pass through affair, you could easily modify the SCSI dock to
take its place.

The disappointing thing about this is that Newer could have easily and
inexpensively built such a switch into the docks. All of their Duo dock
products did this. Someone once mentioned that they couldn't believe how
expensive these things were considering what you got. Finding this out
about the SCSI disk mode, I'm inclined to agree with them.
