duply is a command line program, rather than a GUI - it is very helpful
for setting up profiles of settings, but is not a GUI.
I suspect that, if you were doing things at the command line, you would
want to restore somewhere empty and then manually copy over what you
want.
I'm not in front of a machine with duplicity at the moment, but think you could
just do something like:
duplicity file:///path/to/source/files /home/bob/restored_files
