I understand, the binary will also be OK.

In between i have found some additional information about the PMT Type for 
AC-3 streams from http://www.coolstf.com/tsreader/support.html:

So i think dvbcut should also support this defacto standard types 
(0x81,0x83,0x85) for audio streams.
