It helped for "Δ", but, unfortunately, not for left/right angles for which I guess I'll have to use numeric entities.
It's not a character input problem. Inserting numeric entities (e.g. "⟨", Mathematical Left Angle Bracket) in your document will not help.
It's a font problem. Please consider choosing a font having even more glyphs than the one you have already chosen to get a "Δ" in the PDF.
