Rick,

There is currently no direct way to specify these settings via the 
EclipseME GUI.  You can add the necessary parameters on the "Emulation" 
tab of the launch configuration dialog in the "Extra Emulator 
Parameters" field.  Running the emulator with no parameters yields the 
following parameter information:

-Xverbose[: allocation | gc | gcverbose | class | classverbose |
         verifier | stackmaps | bytecodes | calls |
         callsverbose | frames | stackchunks | exceptions |
         events | threading | monitors | networking | all
                   enable verbose output
