The response of your question is on the sections 4.4 and 4.5
In fact you have to :
1) add a schema containing the field that you want to add
2) add a new document type (reusing existing schemas)
3) let become this new type document creable in type folder
4) associate different views (modify/metadata/...) to this new document type
5) maybe create a new metadata view (I'm not sure that it's necessary)
3 last points are not described on the document but you can look
/Nuxeo/OSGI-INF/ecm-types-contrib.xml
I'm not totally sure of my response.
