There's several solutions to use multiple JBoss installations on one or several physical or virtual machines.
You can use IP binding (the simplest way I think) or port translation. There's some documentation in :

You can deploy each stack in a standalone JBoss (binded on its IP) and use configure your hosts file to define these aliases : nxdbserver, nxcoreserver, nxsearchserver, nxplatformserver, nxjmsserver pointing on corresponding JBoss IP.
They're defined in nuxeo-platform-ear/src/main/assemble/resources_core, .../resources_search, .../resources_webplatform/
Look in config/ and datasources/ directories.

More precise documentation has to be written. I didn't because we want to simplify the assembly process.
For now, each resources_* directory may contain modified files of the default ones in "resources".

Check you have a *checkout* version of nuxeo, not an *exported* version.
