You may have a loook on trunk at
org.nuxeo.ecm.platform.transform.jooconverter.TestJOOConverterService.testOptions
So just put your (namen Value) pais of beans.PropertyValue in the
options Map
These options will be relayed to OOo through JODConverter and OOo will
filter and use the options he knows based on
http://api.openoffice.org/docs/common/ref/com/sun/star/document/MediaDescriptor.html
Also to note, there has been a recent release of JODConverter that allow
to deal with low level OOo objects and access the overall configuration
