you can download tar.gz and zip archives of the "default" application from here:

http://www.nuxeo.org/static/NuxeoEP/

Of course, for a "real" project, you usually don't use the default application, and the standard (at least for us) way to deploy your application (i.e. the standard modules from a Nuxeo release + your own customization) is to use Maven.
