Thanks for your answer , I 've found the theme-default.xml file in
/usr/local/bin/nuxeo-ep-5.1.5.1.GA/server/default/deploy/nuxeo.ear/nuxeo-platform-webapp-core-5.1.5.jar
, I extrated the .jar and now I can modify the content of this .jar to change
the theme.

Since the source code is retrieved using Mercurial, the package names have
changed.
I said you can find theme files here :
org.nuxeo.ecm.platform/nuxeo-platform-webapp-core/src/main/resources/themes/
but you'll rather find them here :
nuxeo/nuxeo-platform/nuxeo-platform-webapp-core/src/main/resources/themes/
