I have to agree with Cathan (Koch-Cook) that being a vegetarian is hard work. There
are veggie cookbooks
out there, but I have yet to find one that has *easy* recipes. I work and go to grad
school; my hubbie works 2
jobs and goes to grad school -- we have a hard time finding time to eat together, much
less enough time to cook
some of the recipes in these cookbooks!

I know most of you will view that as an excuse :) However, we do try to eat lower on
the food chain as much as
possible! Plus, when we do eat meat, we buy it directly from a local farmer. This
saves on transportation,
rainforests, etc.

One day, I hope that I will be totally *meat-free.* I hope that the effort counts for
something.

Peace,

Mary
