Regarding definitions of sustainability, I offer the keynote address I gave at
the 2004 Colorado TWS meeting on sustainability rhetoric:

Click on the 3rd slideshow entitled "Economic Development, Economic Growth, and
Environmental Protection: A Crucial Role for Biologists in Technical and
Rhetorical Clarification." It should only take a minute to download. Be sure
to turn speakers on to hear the pig grunts vs. owl hoots toward the end (all
associated with rhetoric vs. otherwise, respectively).

As for books on this subject, I highly recommend Sharon Beder's Global Spin and
Simon Dresner's Principles of Sustainability. Both do an excellent job of
tracing what's been said to who's said it (or who has funded the saying).

Cheers,
